Bebinca & Paul John Whisky
Bebinca – Bebinca is a Goan dessert which goes through a traditional process of cooking. Some people say it is time consuming and some say if made with the right amount of love no process is time consuming, it is primarily made with plain flour, butter, egg yolk and coconut milk. The soft yet firm texture of the dessert makes it a snack or a dessert, however you prefer eating it. The ingredients are very simple, yet it is put together to make an absolutely mouth-watering dessert to come out of the mystical land of Goa, the origins of which date back to the Portuguese and even the Malaysians.
Paul John Single Malt Whisky – PJSM is a single malt whisky made in Goa which goes through the traditional whisky making process. Simple ingredients such as barley, water, yeast, lots of love and dedication, then matured in American oak makes this whisky an absolutely dream come true. Paul John Edited & Bebinca – Edited is perhaps the smoothest peated whisky available, it is subtle in nature with its smooth peatiness retaining all its fruity characters from Brilliance. Key notes from Edited include mocha, wood spices, liquorice & some vital Indian spices. With the rich coconut milk and Ghee from Bebinca, Edited seems to act like a palate cleanser where the creaminess of the dessert is washed down nicely with a spice note from Edited. It may come across as the personal favorite to most as it gives an opportunity to indulge in the dessert while washing it down with the golden dram. The peat still lingers in the mouth but the buttery nature may seem to have held up awaiting to say Au Revoir.
Paul John Bold & Bebinca – Bold, which is the new guy in neighbourhood, comes with an assertive peat to compliment the lovely sweetness. Bold is known for its spicy character which reminds people of the ceremonial traditions in an Indian household. The lentils, spices and wood makes the brain think of a family gathering at an Indian wedding, which often is an organised chaos or even incense sticks and coconut breaking at an opening ceremony of a bollywood movie . Bebinca has a lot of those characteristics and a combination of the Bold and this mystical Goan dessert is nothing less than a carnival rejuvenating all your senses taking you to an unchanted tropical forest.
Paul John Select Cask Classic & Bebinca – I am sure you may have heard of some heavyweight battles, Ali Vs Fraser, Aus Vs Eng at the Ashes or even arch rivals Eng Vs Wales in Rugby. The combination of Bebinca and Classic is nothing less than the mentioned heavyweight battles. Classic does not come with a hint of vanilla and honey, in fact it delivers a lot of vanilla & honey, it does not come with a hint of tropical fruits, in fact Classic is the epitome of tropical paradise. Bebinca as we already know is a heavy-weight and when the creamy, floury, buttery nature of the desserts interact with the intense Select cask Classic there is an explosion in your mouth which is full of natures goodness. The high ABV % help the cleansing process post the explosion. So your mouth goes through a big event and then there is this amazing auto clean-up process after that. Warning :- This combination can be highly addictive.
Paul John Select Cask Peated & Bebinca – Yet again two heavyweights meet this time with a twist, this will remind you of the Rocky Balboa films where Rocky comes out with a surprise to prove you wrong and win the battle and the opponents love him for the effort too. Peated as the name suggest has a good amount of Peatiness not to be confused with smokiness. The good sweet nature of the whisky does not allow the peat to become smoke. Peat complimented with an intense character is itself a marriage made in heaven. Bebinca has all the rich characters and the Peatiness confronts the richness of the dessert. When you eat the dessert first the palate is most satisfied but then the Select cask peated turns up and says ” Hey what about me?”. So the combination turns out to be one of those experiences where two heavyweights battle and walk away with a hand shake at the end. Yet again this could turn out to be one of the favorites.
