Single Malt is distilled at a single distillery from water and malted barley without the addition of any other cereals, and by batch pot distillation. By law, a single malt has to be matured for a minimum of 3 years in oak barrels. A Blended Whisky is a mixture of more than one single malt and single grain whiskies from multiple distilleries.

By law, a single malt has to be matured for a minimum of 3 years in oak barrels. Almost all Indian whiskies are distilled in multiple locations, the sugar source used here is Molasses (by-product of sugar cane). A single malt is a superior product crafted with more attention and care using traditional processes.

In chill-filtering, whisky is cooled to between -10° and 4° Celsius (often roughly 0°) and passed through a fine adsorption filter. This is done mostly for cosmetic reasons that is to remove cloudiness, rather than to improve taste or consistency. While removing the residual matter, certain flavour and aroma compounds are also removed from the whisky. At the Paul John distillery, we do not employ this process to ensure our products are authentic and all the flavour and aroma is maintained in the bottle.

We source our peat from the beautiful and scotch capital Aberdeen, Islay region in Scotland.

Angel Share is a term used to describe the volume of liquid that evaporates from the cask over a period of the year. In Goa the Angel Share is 8% while it is 2-3% in colder climates like scotland.

New Make Spirit is the resulting distillate of second distillation. It is colorless and has an ABV of about 68%.

Large parts of Scotland are covered with peat bogs. These peat layers have been formed over a period of 1000 to 5000 years by decayed vegetation and can be up to several meters thick. This coal like substance is burned during the kilning phase of the malting process. The smoke from the burning peat infuses with the barley grains in the kiln to produce Peated Malted Barley. Using this type of malt in the distillation will produce a whisky with a smoky and phenolic flavour.

Besides the physical differences, two row barley is high in carbohydrates while six row barley on the other hand Six row barley has high protein levels, thus adding to the characteristics of the whisky.

Cask Strength means that whisky has not been diluted after the cask was empties for bottling. The ABV in the bottle is the same as the ABV in the cask.

Alcohol by volume or ABV is a standard measure of how much alcohol is contained in a given volume of an alcoholic beverage. Ideally, Single Malt Whiskies have an ABV above 40%. To be a non chill-filtered whisky we need to bottle it at 46% ABV and above.

The Single Cask refers to the bottling of only one single cask, done at cask strength. It is sold in limited numbers and each bottle bears the cask's and bottle number. While Select Cask is a vatting of multiple casks selected by our master distiller.

NOSE

Your sense of smell will truly transport you to Goa. Holding the rim of the glass an inch away from your nose, tilt the glass slightly towards yourself. Gently breathe in the aromas. Let the notes flutter in. Free your senses to explore every inch of Goa.

POUR

Pour yourself a small peg of the Single Malt. For the best experience, use a snifter, or a tulip glass. Allow it to breathe for at least ten minutes.

SWIRL

Now swirl it around gently, letting the Single Malt coat the glass. As the volatile vapours break free, the first hint of aromas sets in. Take a moment to admire the consistency of the amber liquid as it coats your glass.

WATER

To experience The Great Indian Single Malt at its best, do not add any water. But if you do wish to underplay the flavours a bit, add no more than a few droplets of water.

TASTE

Savour Goa by taking the tiniest of sips. Take in just enough to coat your mouth. Swirl it around your tongue, tantalising every single taste bud. Feel the consistency. Let the flavours speak. Then swallow it.

FINISH

The finish lets you linger, allowing you to savour The Great Indian Single Malt for a little longer. The aftertaste leaves you with a subtle yet distinct impression.
