The Whisky to try right now: Paul John Oloroso Select Cask
We're always game to check out a great homegrown whisky, and there are a few veteran brands that never disappoint-and Bangalore-bred Paul John features high on that list. The single-malters have many an edit that warrants stocking up on, and one of their most recent is the Oloroso Select Cask, a bottle from their new Select Cask range of whiskies. This special edit from the coasts of Goa is finished in Oloroso casks, giving it soft (but very poignant) sherry influences. Look to this 48 percent ABV malt if you're after something nuanced and layered, but not intense or over-rich. It makes for wonderful summer dram, that also transitions well into the fall.
Why We Love It:Because it brings together the best of sherry and whisky in a fluid enough fashion for neither to be overpowering.
The Notes:Just a touch of molasses, with soft notes of blood orange and stone fruit (think peaches and apricots) on the nose. Nuts, chocolate and cake follow it up on the palate.
The Finish:This one has a long, intense finish that teeters between sweet heavy spice (an offshoot of the Oloroso casks). You'll also find a little dark coffee and dark chocolate in there.
Drink It Like This:A globe of ice works well, but if you're more of a cocktail drinker, then try a version of the Sherry Cobbler (a measure of Oloroso, simple syrup, muddled orange and an orange slice to garnish). Though it's traditionally made with sherry, it'll bring out the oloroso casks notes in your whisky beautifully.
Pair It With:Goes beautifully with fresh catch-perhaps a lightly seasoned seafood platter?
